Garlic Scapes

Garlic scapes are the edible flower stalks that emerge from hardneck garlic plants. They are harvested in early summer, before the plant flowers, to encourage larger garlic bulbs. The scapes have a milder, more herbaceous flavor than garlic cloves and can be used in various dishes, either raw or cooked.

  • Flavor: A subtle, garlicky flavor, sometimes with a hint of sweetness and herbiness.

  • Use: Can be added to salads, soups, stir-fries, or used in pestos and other sauces. They can also be grilled, sautéed, or used in dishes like garlic scape compound butter.  

  • Nutrition: Contain vitamin C, vitamin B6, and selenium as well as a source of manganese, calcium, and iron. They are a good source of dietary fiber and contain antioxidants.
