Spinach
Spinach is a nutrient-rich leafy green vegetable that can be eaten fresh or cooked. It's known for being packed with vitamins (A, K, C), minerals (iron, calcium, magnesium), and antioxidants, and is used in a wide variety of dishes. Spinach is a cool-season crop available early and late in our growing season.

Raw: Clean, crisp, and slightly sweet with a faint earthy undertone.
Cooked: Deeper, more savory, and tender.
Baby Spinach: Mild, delicate, and sweeter, often preferred for salads.
Mature Spinach: Stronger, more robust, and nuttier, better for cooking.
Uses: Raw in salads, smoothies, sandwiches. Cooked in soups/stews, dips, pasta, and Sautéed.
